A rich and dense mold-ripened cheese, studded with freshly ground Telicherry black pepper. The Bridgewater combines a slight citrus flavor with the bold spice of fresh pepper, finishing with gentle hints of mushroom. (See the round cheese in the photograph.)
Serving Suggestions
When young, the cheese is best with unflavored crackers or oatcakes. It also makes an excellent addition to sauces. As it ages, it develops a flinty texture and the pepper becomes more pronounced. At this age, it is great sprinkled over salads or pasta.
