INGREDIENTS Pasteurized Goat's Milk
One of our newest cheeses, the Little Ypsi is a great little aged goat's milk cheese akin to a French crottin. It has a beautiful, buttery-yellow rind and a paste that runs the gamut from dense and soft when younger to firm and flinty as it ages.
My favorite way to eat one of these little guys is to slice it up, fan it on a plate, garnish it with a few slices of apple, and wash it all down with a nice hoppy beer.
