We stretch the best curd we could find daily for our fresh mozzarella. Made to be eaten the day it comes out, it has an amazing texture and just the perfect amount of salt to compliment its fresh, milky flavor.
For a great Caprese salad- slice a ball or two of mozzarella and layer on a platter with heirloom tomatoes and fresh basil. Crack some telicherry peppercorns and sprinkle a bit of sea salt on top and hit it with some nice olive oil and you will have the perfect summer salad (even if its the dead of winter!).
