In the first paragraph, there are two incorrect apostrophes in the paean to the Manchester cheese: "... to allow it’s true essence to shine through with each and every bite. Depending upon it’s age ..." In both cases of "it's" in that sentence, there should be no apostrophe (to allow its true essence / Depending upon its age). "Its" in this case is like "his" or "hers", and like those words does not require an apostrophe. :-) Thanks!
