While it isn't beyond the realm of possibilities that we will try and create a hard cheese class, the logistics for now our keeping us focused on the Mozzarella Class. Hard cheese-making involves a lot of short periods of activity with long bouts of inactivity between them and isn't totally conducive to a 2-hour class.
